A sweet and pleasant taste characterizes this cheese which scents of meadows and fresh air, in which are perceivable the healthiness of the air and the genuineness of the milk forming the perfect starting base for a Dop seasoned at least 60 days marked by a soft and yellowish - while paste.
It can be sold in whole wheels or portioned.
Perfect for a snack with a loaf of bread, as the best tradition recommends.
Rae cow's milk, salt, rennet
Shape: Cylindrical with flat or almost flat sides.
Dimensions: diameter of face 15-35 cm, height of the form that can be slightly convex 6-12 cm.
Weight: 1.8 kg and 9 kg. The dimensions and weights refer to the product at its minimum ripening period.
Rind: supple and smooth, color fromm pale straw to reddish brown depending on the seasining, not edible.
Paste: sweet and pleasant, delicate aroma. These little green dots which are not to be considered faults but confirmation that these cheeses don't contain any additions or preserving agents, are mainly present in high quality raw milk products.
Fat: minimum 40% on the dry substance.
Minimum maturing: 60 days.
